- Clean the mussels and place in a cooking pot. Add the finely chopped onions and shallots, butter, pepper and crushed garlic.
- Then add the celery sticks and sprigs of parsley. Add the white wine, thyme, bay leaves and a little water if necessary.
- Allow to cook while stirring until the mussels open fully.
